Candy-sweet Carrots

Put a bowl of sweet carrots on the table and stop the eat-your-veggie wars forever. Your kids will love eating them, and you’ll love knowing that you’ve served up one of the richest sources of vitamin A, an essential nutrient for healthy skin, eyesight and immune function. One serving provides more than triple the amount of vitamin A needed in one day!

Time-saving tip: Peel carrots in advance and refrigerate in a zippered bag or airtight container. 

Makes about 4 servings

Ingredients
1 pound carrots
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper

Directions

  1. Peel carrots and cut in half lengthwise.
  2. Brush carrots with oil, sprinkle with salt and pepper, and lay directly on grill.
  3. Cook over medium to medium-high heat, turning once, until carrots are tender-crisp, about 20 to 25 minutes.

Nutrition information (per serving) 80 calories; 3.5 g fat; 0 mg cholesterol; 220 mg sodium; 12 g carbohydrate; 3 g fiber; 1 g protein.
